Abstract: Probiotic is a non-pathogenic microorganism that can benefit its host. Therefore to start colonization and increase their transit time in the gut so the probiotic can interact with the host and give health benefits they must adhere to the intestinal epithelial cells. Bacterial adhesion is a key probiotic property that Pediococcus acidilactici must have as a probiotic. The ability of the P. acidilactici before and after spray drying to adhere to mammalian cells was investigated. Adhesion test and aggregation test were performed to demonstrate that P. acidilactici even after spray drying still has the ability to adhere to the mammalian intestinal cell. The adhesion test using human colorectal adenocarcinoma HT-29 shows that the P. acidilactici both free cell and spray drying sample has the ability to adhere to the mammalian intestinal epithelial cell.
