Abstract: The demand for Strawberry flavored drinking milk has increased for the past five years, hence it became part of Symrise Indonesia flavor portfolio division strategy. Symrise Indonesia is planning to fill the gap in the strawberry dairy collection and create a new flavor with the profile direction of the market leader in Indonesia. The aim of this study is to identify Strawberry flavourings with the similar or even “better than” direction with Ultra Milk Susu Stroberi. Acceptability testing was conducted to evaluate the intense strawberry flavor in milk with the similar direction. In addition, a descriptive analysis was conducted with 6 trained panelists, to assess the similarity on flavor profile. The result on three sample prototypes, are as follows with significant ranking between samples, starting with Formula 2 (0.08% Flavor A) having the highest rank, Formula 1 (0.09% Flavor A), Formula 3 (0.09% Flavor B and 0.03% Flavor C), which makes Ultra Milk Susu Stroberi having the lowest preference ranking. The reasoning behind it is the balanced strawberry and milky profile on the milk having higher rank as well as having adequate sweetness level, in addition to having prominent pink color. The result is brought to attention that Flavor A with Formula 1 and 2 prototypes having the highest rank, is presented to the company for future strawberry dairy flavor promotion to customers.
